Easy baked fish


This surprisingly simple recipe has become one of my new favorites.  I tried it as an experiment one night, and I've come to love it!  It's great extra great when served with a little fresh lemon juice on top.  Try it with a side of vegetables and seasoned rice, and a glass of white wine for a fantastic quick and easy meal!

INGREDIENTS:

1 fillet of fish, any kind (so far, I've tried it with cod, white fish and trout, and all three turned out great!)
Seasoned bread crumbs (like the kind you buy in a can)
Parmesan cheese, grated
Romano cheese, grated or shredded 
Olive oil

DIRECTIONS:

1. Take a glass or ceramic casserole dish and lightly grease the bottom with a little olive oil.  Place the fish in the dish, skin side down.

2.  Sprinkle with bread crumbs and cheese.

3. Bake for about 25-30 minutes in 350 degree oven.  It's done when the fish easily flakes with a fork.
